Pareusi Pop Up Dining Experience
For the first time in eight years, we are finally putting on our Pareusi pop-up dining experience.
Date: Saturday, 18th April 2026 - Sit down for 19:00
This will be held at the beautiful Rose-in-Vale Country House Hotel, located in Mithian, just outside Truro. This stunning country house dates back to the 1600s and has an incredible history linked to Cornwall’s mining heritage.
This was also the last place I worked as a chef before starting Pareusi, so this is most definitely a full-circle moment for me, and I’m incredibly excited to share it with you.
The menu: Since starting Pareusi, we have been lucky enough to have met some of the greats in the industry. The dishes on the menu have been inspired by their styles and ethos.
Bread course
Fresh baked, bread with smoked rosemary whipped butter (rosemary picked from the grounds of the Rose-in-Vale).
Starter
Tempura-battered aubergine with toasted almonds, chilli, and honey from the beehives across the road from our workshop.
Main
Phillip Warren belly pork cassoulet.
Dessert
Apple tarte tatin with Calvados cream.
This will be a feast-style experience, and we will also be holding a little quiz at the end, with a selection of prizes available.
There will also be a small collection of knives available.
